This is 100% sugar free. We use erythritol and monk fruit as sweeteners.

Q: What is the purpose of the vinegar?

I really don't know the answer but I suppose it is some kind of chemical response that will happen to the cake when it's added, possibly making it more fluffy, according to my Google search. There isn't any vinegar taste at all and it's such a small amount to add. With this cake mix, I add an extra tablespoon of oil and bake it at 325 instead of 350. That way it doesn't come out dry as some of these Keto cake mixes can. Good luck. It's a great and delicious mix.
